I came up with this recipe on a morning when I didn’t want to use protein powder but still wanted my waffles to do something.



These blueberry hemp seed waffles are simple, nourishing, and sneakily functional — loaded with healthy fats, fiber and a little plant-based protein thanks to hulled hemp hearts. Plus, a handful of wild blueberries adds a boost of antioxidants and just the right touch of natural sweetness.



Top them off with a dollop of coconut yogurt, more hemp, and a dust of date sugar for a low-lift brunch that feels indulgent but loves your gut.

Ingredients


DRY INGREDIENTS
1 1/4 cup Bob's Red Mill All-Purpose Flour
2 tbsp hulled hemp seeds
2 tsp cream of tartar
1 tsp baking soda
1 tsp date sugar,optional
1 tsp Ceylon cinnamon
pinch of sea salt

WET INGREDIENTS
1 brown egg
3/4 cup coconut milk (or other)
1 tsp vanilla extract
1/4 cup wild blueberries (fresh or frozen)

yields ≈ 3 waffles, serving size = 1 waffle


Directions

Step 1 • Combine dry ingredients.
In a large bowl, sift together the flour, hemp seeds, baking soda, cream of tartar, cinnamon, salt, and optional date sugar.

Step 2 • Whisk wet ingredients.
In a separate bowl, beat the egg, then whisk in coconut milk and vanilla extract.

Step 3 • Mix and rest.
Pour wet into dry ingredients and mix well. Allow the batter to thicken for about 5 minutes..

Step 4 • Heat and prep waffle iron.
Preheat your waffle maker to medium-high. Once hot, lightly grease with a cooking oil of choice.

Step 5 • Cook waffles.
Pour about 1/4 cup of batter into the center of the preheated waffle iron. Gently drop a few wild blueberries onto the surface of the batter before closing the lid — this helps them stay whole and prevents soggy spots. Don’t overfill the waffle maker, or it may spill out the sides. Cook until the indicator signals or waffles are golden and crisp. Repeat with remaining batter.

Step 6 • Plate and top.
Top with a spoonful of coconut yogurt, a sprinkle of hemp seeds, a dust of cinnamon or date sugar, and a drizzle of maple syrup. Enjoy warm.
